So this is a pretty neat feature all things considered; it was originally called Gender Swap Mode but now it's a bit more inclusive. You can individually pick genders and pronouns for every major character in the game, meaning you can mix it up to have a female Shovel Knight save a female Shield Knight or a male Shovel Knight save a male Shield Knight, more details in this Polygon article that kind of goes into the thought process of this mode as well:
